What can I do....??
Question: to say thank you to the paramedics who came rushing in to save a family member from a seisure? Is there some kind of gift I could take to them?
Answers: As a EMT I would recommend that you just stop by their station to visit and tell them in person what a wonderful job they have done. Also if their service has questioner's about the care received fill one of those out . Trust me a thoughtful visit or letter of thanks will stick with the paramedics longer than a gift. Besides some services are kind of fun about allowing their employees to except gift.
find out who they are, take them out to dinner. or if they can't accept it, then maybe some coffee and donuts.
make cupcakes and give them a thank you card (a giant one, if you can find one) signed by everyone in the fam who also is grateful. or go in and take orders for coffee and treat everyone. or give everyone chocolate.

You could bake them a cake, or take them a nice bunch of flowers and be sure to put a nice thank-you card with whatever you do. But you know that sometimes just if you go and say thank-you and how much you appreciate what they do for the community that would also mean a lot to them.
You might want to check they can accept gifts first as some jobs cannot. I would give them something unique. maybe a gift voucher. Or something to relieve stress? I couldn't imagine a job worse than watching people suffer/die all day long! good luck with whatever you find!
Many services frown on the receiving of gifts and place a low limit on the monetary value of any gift allowed to be received.
Trust me - a thankyou letter to the paramedics concerned will really make their day. Other options include writing to the Officer In Charge at their HQ (good for the paramedics record) or even firing off a letter to the local newspaper (let the community know how much you value them.)
As for cakes...we have a fire, police and ambulance station close to each other and each year the local 'odd person' bakes each station a cake for Xmas. A firie got really bad diarrhea and vomiting after being the first to try the cake and now all such items go in the bin...
